Oooh that's great. I love the Gmund Colors papers for envelopes, cards etc.:

(Sorry, they only ship to a handful of European countries).

A few more, mostly for people of the European persuasion.

Writing paper:
Artoz
Elco
Rhino

For finished work:
Arches
Fabriano
Saunders Waterford, Millford & Bockingford

There's also Schoellershammer, but their website isn't much help.

Finally, one retailer:
Falkiner Fine Papers

Careful with this one ... could be expensive.  ;)

When I order from one of these, like Cards & Pockets or Paper Source, will anything I order be of high paper weight/gsm?

I want to find note cards and envelopes that are as close to the practice paper I use (HP Premium Laser Printer Paper).  I can’t find anything on either of those sites that really specifies.

I want to find some A6 flat or folded cards and matching envelopes to use for everyday thank you cards and other personal correspondence.  I picked up some from Hobby Lobby in a pinch and could barely make it through one word because my nib was catching so much.

Thanks so much for any helpful advice and/or suggestions!

Both cards and pockets and Papersource have some great paper for calligraphy. The cards and pockets envelopes vary in terms of their paper type and weight but I have never had one that I was disappointed in. And they have all been sized perfectly. Papersource has been a bit less reliable for me.

Unfortunately, HobbyLobby and Michael’s note cards are not sized well and they don’t take the ink or nib all that great.

Fabriano Medioevalis is my all time favorite note cards. You can find it at a number of places online with a search. Both the envelopes and the cards are delicious to write on and take the ink very well.
