"Canonical" Left-Handed Methods

Is there a "canonical" method for using left-handed tools?  My research has left me confused.  There's such a variety of left-handed methods that I find myself uncertain which method tools like this:



...are really intended to be used, why they're helpful.

After much trial and error, I now believe these left-handed chisels are intended for overwriter writing styles using a straight holder, like so:



They are built way more solid than the right-handed version, intended for pushing rather than pulling, and the angle fits just right when used this manner.
