Best Iron Gall based on changing color?

So I finally want to try Iron Gall ink but mainly because I've heard that some of them start out a light color and then slowly turn to black. I would like to know what Iron Gall ink has the most impressive or fun to watch color transition. Thanks!

Haha!  It depends what you write on to some extent, and you might be waiting for quite a while with some high quality internally sized cotton papers.  As in weeks.  It's very slow with Elco, for instance, but almost instantaneous on Rhodia.

Anyway, that said, if you're looking for a startling transformation from dirty dishwater to jet black, Blots is unlikely to disappoint.  The same probably goes for Old World, which appears to be a close equivalent.  If fountain pen friendliness is desirable, ESSRI is quite dramatic compared to others.

It also depends on how long you had your ink on the shelf already – after a while it gets darker in the jar. The ink from

is usually sold very fresh (light).

KWZ has some quite spectacular colour shifting IG inks.
